After thousands of dollars in wasted dough, recipes that did not live up to their expectations, and cookies that were just plain embarrassing to them today, the cousins decided to try something a bit unique, A/B testing their way to the perfect cookie. They would take the exact same cookie, change out one ingredient like chocolate chips and randomly visit local gas stations and grocery stores simply asking one question "Which one of these two cookies is the best?" This is a great place when you want Mexican food. Always fresh and tasty. Wait a tad long but they don't keep things under a lamp like Taco Bell. Only thing that I hate IMO is the menu has too many options. I hate deciding as it is! Also it would help non-Spanish speaking customers to have English next to Spanish words so I don't have to use google when ordering. Highly recommend this place One photo is my receipt. Just months ago you were hard-pressed to find someone who knew what cake pops were, let alone companies making them. Now, they are “popping” up in every bakeshop, supermarket, and coffee house. The cake pop craze was becoming mainstream and as orders accumulated; I reached my productivity capacity and was feeling the rolling pain in my hands. As I searched for a machine that would relieve my pain I couldn’t find one that did the job. My search continually came up empty, desperate to find an “easier way”, I decided to build one myself. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

Rosemary and Rito have since passed the company on to their daughter Charlotte who embodies the same work ethic her parents instilled within her over the course of their careers. Like a true family-owned business Charlotte works alongside her sister, nieces, nephews, sons, and long-time staff some of whom have been with the company for over 30 years.
