Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

In 1952, a brand spanking new silver bullet diner was delivered to a small community in Upstate New York. This Mountainview Diner, built in Singac, New Jersey, Model No. 330, was slated to be “the most modern kitchen in all of upstate”. The residents of Herkimer watched in amazement as the diner was delivered on a flatbed truck and installed right along Main Street. For 65 years the Empire Diner has been the hub of the community and has held a special place in the hearts of many. It tells a story of a gathering of family and friends enjoying great food and lots of laughs. Otto’s Empire Diner has kept the tradition alive and well, winning numerous awards with their food. Among the most notable are the Best Cheeseburger and Best Bacon Cheeseburger awarded by the New York Beef Council and the most recent acclaim of Best Diner in Upstate New York as voted by hundreds of thousands of New York residents. How did we get started? The Pandemic caused a lot of people to change how they live, and we were no different. Not being able to go to our favorite restaurants had a major impact on our lifestyle. Due to the time it takes to make Pho the right way, one of our favorite places to eat was our local Pho restaurant. However, once the pandemic was in full effect, this was no longer an option. So what did we do then? The entire family got involved in brainstorming on how we can make AUTHENTIC Pho in a short amount of time to make it convenient for our busy lifestyle. First, we took our family recipe that has been passed down several generations, and started to experiment on ways to make it faster, and not sacrifice flavor, taste or authenticity. With over 20 years of experience selling tacos in Mexico, the Torres family decided to start their own taco stand in Peoria, Arizona in April 2016. Blessed with a lot of community support, the first brick and mortar location was opened in Glendale in 2017! Currently, there are 3 locations in the West valley, 2 in the East valley and 1 in Central Phoenix. We serve authentic Mexican food. The taco was always meant for the worker on the run; an individual that needed to eat quickly but also needed it to be affordable. That is who we are. We pride ourselves in keeping our menu simple with only two meats and now a veggie option. Nothing is ever frozen. Our salsas, guacamole, and marinades are made daily. We never use concentrate for our horchata or Jamaica. Instead we soak our rice with whole cinnamon sticks overnight and blend the next day and we steep our hibiscus flowers to make our Jamaica- it’s a very labor intensive process but we do it because we want to give you an authentic experience when you eat with us.
