Javier Ruiz immigrated to the United States in 1967 with the dream of opening a taco shop. He achieved his dream 16 years later with the help of his brother David Ruiz by opening “Cotijas Taco Shop” in El Cajon, California. Thanks to the success of this restaurant, more of the Ruiz family members were able to become more involved in the company. To find the perfect recipe, you first need the perfect ingredients. And that's what our founders Dena Tripp and Debbie Shwetz were for each other. In 1997, they joined forces, or better yet kitchens, to help make cakes to entertain their friends. The cakes they made were delicious, unlike anything anyone had tasted.
