Nick DiLello - Owner Nick started his career in the bridal industry opening retail stores across the Southwest. In 2001 he worked at a wedding venue as a General Manager in Las Vegas. He specialized in planning corporate events and designing wedding receptions. An entrepreneur at heart he then purchased a franchise for a national wedding publication in the Arizona market in 2002. For the past 18 years he has produced the second largest and ONLY locally owned and operated bridal planning event in Arizona. Customer service is his number one focus. While his career path has been varied the pride he shows in everything he does shines through. Opening Bottega Pizzeria Ristorante in 2017 combined his love for food and hospitality. In 1952, a brand spanking new silver bullet diner was delivered to a small community in Upstate New York. This Mountainview Diner, built in Singac, New Jersey, Model No. 330, was slated to be “the most modern kitchen in all of upstate”. The residents of Herkimer watched in amazement as the diner was delivered on a flatbed truck and installed right along Main Street. For 65 years the Empire Diner has been the hub of the community and has held a special place in the hearts of many. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

Thanks to the success of this restaurant, more of the Ruiz family members were able to become more involved in the company. In 2003, the Ruiz brothers decided it’s time to expand the family business to Tennessee under the name “Oscar’s Taco Shop®.“ Today, Javier Ruiz has handed the keys to his kids and even though he is retired, he reminds them to always look forward and never look back.
