Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

How did we get started? The Pandemic caused a lot of people to change how they live, and we were no different. Not being able to go to our favorite restaurants had a major impact on our lifestyle. Due to the time it takes to make Pho the right way, one of our favorite places to eat was our local Pho restaurant. However, once the pandemic was in full effect, this was no longer an option. So what did we do then? The entire family got involved in brainstorming on how we can make AUTHENTIC Pho in a short amount of time to make it convenient for our busy lifestyle. First, we took our family recipe that has been passed down several generations, and started to experiment on ways to make it faster, and not sacrifice flavor, taste or authenticity. Second, we spent time and time again perfecting our process until finally, we hit perfection! What did we do next? We made kits for ourselves, family members, coworkers and friends to enjoy at home. History Established in 2006. my wife and me are Pastry Chefs as well as Chef de Cuisine ,we both know how to Bake, Decorate, Create desserts,breads,Pastries and also Cooking. i lost my job in 2004 and my wife Hotel was demolished in 2005, so 2 years after that happened we decided to open a Filipino Bakery , then the following year a next door space was available , so we turn it into a Restaurant , offering Classical Filipino dishes , our bakery is international , we have French, Italian , Greek and on some ocassions German Pastries, specially for Christmas i make a traditional dresden Christmas Stollen. let me not forget that being the firs filipino bakery in arizona , we create the best Filipino Pastries, Cakes and desserts in Arizona.
