From September of 1989 until June 1999, my wife and I owned and operated "Town Line Deli and Pizzeria" on Cape Cod Massachusetts. Back in January 1999, we vacationed in Arizona at my brother's house in Arrowhead. Anthony and Tina told us the area was starving for a "family" owned Pizzeria where families can enjoy the casual atmosphere and great back east style Italian food at a good price. On the airplane ride back to frigid, snowy, icy, Cape Cod, Judy and I decided to put our pizzeria up for sale and move ourselves and our son Robert to the Valley of the Sun. This is a great place when you want Mexican food. Always fresh and tasty. Wait a tad long but they don't keep things under a lamp like Taco Bell. Only thing that I hate IMO is the menu has too many options. I hate deciding as it is! Various types of sushi (and other food and drinks) rotate throughout the restaurant on a conveyor belt. The price of items on the conveyor belt is $2.50 per plate all day. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

If you like fresh bagels, then you'll love Hot Bagels. The shop makes its bagels by hand, not by machine. The bagels are crusty on the outside and chewy on the inside, the way real bagels where meant to be and all of them are hand roll boiled and baked bagels daily. We serve breakfast and lunch everyday. It's quite a show to watch the large mound of dough being hand rolled and boiled. It smells great, too.
