In 1958 the first Village Inn Pancake House opened its doors in Denver, Colorado and began offering what has since made us famous— made-from-scratch buttermilk pancakes, fresh eggs cooked any style, sizzling bacon and a pot of steaming hot coffee. Just months ago you were hard-pressed to find someone who knew what cake pops were, let alone companies making them. Now, they are “popping” up in every bakeshop, supermarket, and coffee house. The cake pop craze was becoming mainstream and as orders accumulated; I reached my productivity capacity and was feeling the rolling pain in my hands. As I searched for a machine that would relieve my pain I couldn’t find one that did the job. My search continually came up empty, desperate to find an “easier way”, I decided to build one myself. Over several months and through trial and error with different materials and processes, the Easy Roller was born. We’re very proud of the beautiful shop that we’ve built in Peoria, Arizona. We’re very proud of the great specialty coffee that we serve from Peixoto. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Rather, we saw an opportunity to serve and host this thriving community and concluded that a great coffee shop would be a great way to do this. Rito's Mexican Food is celebrating 45 years of business this year and we could not be more excited about the future as a company. What began as a neighborhood convenience store within the Garfield Historic Neighborhood quickly found itself selling more burritos and tacos from its limited "to go" only kitchen, than grocery goods. To that end, Rito and Rosemary Salinas decided to pivot Rito's concept into a take-out-only Mexican Food establishment that has served the "Valley Of The Sun" time-honored family recipes spanning generations. Rosemary and Rito have since passed the company on to their daughter Charlotte who embodies the same work ethic her parents instilled within her over the course of their careers. Like a true family-owned business Charlotte works alongside her sister, nieces, nephews, sons, and long-time staff some of whom have been with the company for over 30 years.
