Javier Ruiz immigrated to the United States in 1967 with the dream of opening a taco shop. He achieved his dream 16 years later with the help of his brother David Ruiz by opening “Cotijas Taco Shop” in El Cajon, California. Relaxed place with simple decor where plates of sushi circulate on a conveyor belt. Our specialty is conveyor belt sushi. Various types of sushi (and other food and drinks) rotate throughout the restaurant on a conveyor belt. The price of items on the conveyor belt is $2.50 per plate all day. Simply take the items you want from the conveyor belt and stack the empty plates on your table. Your server will count the color and quantity of plates when you are ready for your check.
