The idea of Booty's was hatched way back in 1985 by Andy LiButti while he was attending Florida International University. What began as a neighborhood convenience store within the Garfield Historic Neighborhood quickly found itself selling more burritos and tacos from its limited "to go" only kitchen, than grocery goods. To that end, Rito and Rosemary Salinas decided to pivot Rito's concept into a take-out-only Mexican Food establishment that has served the "Valley Of The Sun" time-honored family recipes spanning generations. Rosemary and Rito have since passed the company on to their daughter Charlotte who embodies the same work ethic her parents instilled within her over the course of their careers. Like a true family-owned business Charlotte works alongside her sister, nieces, nephews, sons, and long-time staff some of whom have been with the company for over 30 years.
