Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

To find the perfect recipe, you first need the perfect ingredients. And that's what our founders Dena Tripp and Debbie Shwetz were for each other. In 1997, they joined forces, or better yet kitchens, to help make cakes to entertain their friends. The cakes they made were delicious, unlike anything anyone had tasted. As a result, their friends and family asked them to entertain more and more. They quickly realized this side project of theirs could be something more. We’re very proud of the beautiful shop that we’ve built in Peoria, Arizona. We’re very proud of the great specialty coffee that we serve from Peixoto. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Rather, we saw an opportunity to serve and host this thriving community and concluded that a great coffee shop would be a great way to do this. Our recipes trace back to our homeland of El Salvador where “Niña Martha” became known by her community for her delicious chicken tamales, fresh green corn tamales and various other homemade meals that she would send her daughter Miriam to deliver to the workers at the “fincas”, the fields of coffee beans and corn. After relocating to Arizona, in 2002, the family opened up their first location in Mesa, AZ. Fast forward to 2021, the business has grown to 2 locations in Phoenix, 2 in Mesa, 1 in El Mirage, 1 in California and a new location opening in 2022.
