Tucked inside a small, cheery cottage, this restaurant offers a range of Vietnamese dishes. While offering exemplary, homemade tasting versions of Vietnamese classics such as the reliably delicious "phở" (rice noodle soup) or "bún" (rice noodle salad bowl), Little Saigon also focus on lesser-known and more unique Vietnamese staples such as "mì quảng" (turmeric noodle soup with shrimp, steamed pork and rice crackers), "bò cuốn lá nho" (grilled beef wrapped in grape leaves) and "gỏi ngó sen tôm thịt" (lotus root salad studded with shrimp, pork and pickled vegetables). Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

The idea of Booty's was hatched way back in 1985 by Andy LiButti while he was attending Florida International University. He wanted to create a place that had the Best Wings Anywhere, lots of Sports Action, and a Super Friendly staff. Waldo's Tacos started in Pomona California. Owner Hector Waldo had a brillant idea to cater Authentic Mexico City Tacos for businesses. As companies kept loving the deliciousness , Waldo's Tacos kept growing. In 2005 the Waldo family moved to Arizona and once again started their mission to deliver the best Tacos.
