We are a family owned restaurant specializing in home-style cooking from El Salvador and Central America. Our recipes trace back to our homeland of El Salvador where “Niña Martha” became known by her community for her delicious chicken tamales, fresh green corn tamales and various other homemade meals that she would send her daughter Miriam to deliver to the workers at the “fincas”, the fields of coffee beans and corn. Hot bagels moved from New Jersey to the state of Arizona in 2001. If you like fresh bagels, then you'll love Hot Bagels. The shop makes its bagels by hand, not by machine. The bagels are crusty on the outside and chewy on the inside, the way real bagels were meant to be and all of them are hand rolled, boiled, and baked bagels daily. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]

How did we get started? The Pandemic caused a lot of people to change how they live, and we were no different. Not being able to go to our favorite restaurants had a major impact on our lifestyle. Due to the time it takes to make Pho the right way, one of our favorite places to eat was our local Pho restaurant. However, once the pandemic was in full effect, this was no longer an option. So what did we do then? The entire family got involved in brainstorming on how we can make AUTHENTIC Pho in a short amount of time to make it convenient for our busy lifestyle. First, we took our family recipe that has been passed down several generations, and started to experiment on ways to make it faster, and not sacrifice flavor, taste or authenticity.
