With humble beginnings, we opened up the doors to Mercer's Restaurant in 1987. With a baby in tow, who is now managing the restaurant, we were excited to make home-cooked meals for our neighboring friends. We were welcomed with open arms by the community and have been able to continue serving you because of all the people that help make Mercer's Restaurant the enjoyable and friendly restaurant it is today. The idea of Booty's was hatched way back in 1985 by Andy LiButti while he was attending Florida International University. He wanted to create a place that had the Best Wings Anywhere, lots of Sports Action, and a Super Friendly staff. After working for several different restaurants and various other endeavors, He partnered up with Peggy Young, and together with Charlie Houston and Kurtis Paul they scraped together enough money to open Booty's Wings Burgers & Beer in Surprise in May 2012. We’re very proud of the beautiful shop that we’ve built in Peoria, Arizona. We’re very proud of the great specialty coffee that we serve from Peixoto. We’re even proud of the matte black Not Neutral mugs that we serve our drinks in. But anyone could build something nice, serve something delicious, or buy some neat drinkware. We’re proud of a lot of things, but we’re most proud of the community that we get to experience each and every day in and around our shop. And we certainly didn’t build this community – it was here in the surrounding neighborhoods and schools long before we broke ground. Rather, we saw an opportunity to serve and host this thriving community and concluded that a great coffee shop would be a great way to do this. Our Food Is Fresh… Nothing Has Been Frozen Our initial idea for a richly flavored menu was that our recipes would be made fresh every day. And, that our meats or other food groups would ‘only’ be fresh and never frozen. As we were to find out, this concept is more easily attainable in a traditional sit-down restaurant. Our model, requested by the owner, called for a drive-thru format where a totally fresh menu would be provided for a fast-food restaurant and Phoenicians on the go. The difficulty with serving fresh food in a fast-food delivery style is timing. In a regular restaurant, the food is ordered and the chef or cook puts the meats on the grill or flat top. When it’s done, it is served to the customer. However, in fast food, the traffic speeds have to be anticipated and cooked just ahead of the customer driving through the drive-up lane. Our Brushfire staff, led by Sione Saenz, was able to unlock the secrets of timing and stay committed to providing fresh, never frozen fast food to our customers that really tastes good. [read more]
